{Skinny} Taco Dip

ready to eatPretty much everyone loves seven-layer taco dip, right? It is definitely a family favorite for us. This version has been lightened up a little with the use of some reduced fat products, but no one will even know because it still has all of the great flavors everyone loves. This dip almost always makes an appearance for us at New Year’s Eve as well as many family get-togethers throughout the year. I’m sure it would be welcome at your table for New Year’s or for football watching too. plated

{Skinny} Taco Dip

*This quantity below is for a 9 x 9 square pan which is what I make for our immediate family. I would double this for a 9 x 13 pan if you are taking it to a party or have a larger or hungrier family.

Ingredients:td ingredients

  • 16 ounce can fat free refried beans
  • 2 tablespoons taco seasoning, divided
  • 4 ounces 1/3 less fat cream cheese, softened
  • 4 ounces reduced fat sour cream
  • 8 ounces salsa of your choice
  • 1 cup iceberg lettuce, shredded
  • 1 Roma tomato, diced
  • 1/2 cup reduced fat shredded cheddar cheese
  • sliced black olives to taste

Instructions:

  1. In a medium-sized mixing bowl, thoroughly mix refried beans with 1 tablespoon of taco seasoning. Spread evenly into the bottom of a 9 x 9 baking pan or serving dish.beans
  2. In the same bowl as used above, combine cream cheese, sour cream, salsa, and 1 tablespoon taco seasoning. (Tip: I use my hand mixer for a minute or so, but you can also combine by hand.) Spread this mixture evenly over the bean layer in the baking pan.
  3. Top cream cheese layer with shredded lettuce, diced tomatoes, shredded cheese, and sliced black olives. Refrigerate until ready to serve. (Tip: I recommend chilling for at least an hour to firm things up and meld flavors.)
  4. Serve with baked tortilla chips. (My favorite dipper is Fritos corn chip scoops which are not skinny, but they taste good. :)) This dip will get runnier over time, but leftovers will generally last 2-3 days.

Notes: If you prefer spicier dip, use more taco seasoning with the layers and choose spicier salsa.eat2
