I have mentioned before that chocolate is not really my thing, BUT if you add peanut butter to chocolate, I am all in favor of it. Peanut butter cups have been one of my favorites for a long time. And Blue Bunny has an ice cream flavor called Peanut Butter Panic. Mmmmm. Another favorite.
This peanut butter pie?
Yep, another favorite. And isn’t it pretty?This week marks the one year anniversary of this blog, and I wanted to post something extra special to mark the occasion. For me, peanut butter pie is pretty special. Happy Birthday, Christine’s Taste of Heaven! This pie would also be a great option for your Pi Day party which is only a week away. 🙂
Peanut Butter Pie
*The recipe below is for one 9 inch pie. The pictures show two pies because I doubled the recipe.
Ingredients:
For the crust:
- 25 whole Oreo cookies, ground into crumbs (approximately 2 and 1/2 cups or 10.5 ounces)
- 1/4 cup melted butter
For the filling:
- 8 ounces cream cheese, softened
- 1 cup (9 ounces) creamy peanut butter
- 1 cup sugar
- 1 tablespoon butter, softened
- 1 teaspoon vanilla extract
- 1 cup heavy cream, whipped (you could substitute an 8 ounce container of whipped topping if you prefer)
For the garnish: (optional)
- mini peanut butter cups
- fresh sweetened whipped cream
- Oreo crumbs
- chocolate sauce or hot fudge ice cream topping
- melted peanut butter for drizzling
Instructions:
- For the crust: Combine melted butter and crushed Oreos thoroughly in a medium-sized bowl. Press into the bottom and up the sides of a 9 inch pie plate. Bake at 375 for 10 minutes. Set aside to cool completely before filling.
- For the filling: In a large mixing bowl, beat cream cheese, peanut butter, sugar, butter, and vanilla until smooth. Fold in the whipped cream until thoroughly combined.
- If desired, spread a layer of hot fudge or chocolate sauce into the bottom of the pie crust and then top with the peanut butter filling, smoothing the top. Refrigerate for a few hours to set and firm the pie.
- If desired, garnish the top of the pie before serving. I used swirls of fresh sweetened whip cream, Oreo crumbs, and mini peanut butter cups this time. Drizzles of chocolate sauce and melted peanut butter also look and taste good.
- Keep leftovers refrigerated.
