Asian Grilled Chicken
I love, love, love this chicken. I often get a craving for the wonderful flavor profile it has–ginger, garlic, brown sugar, lime juice, and my favorite part of the chicken–thighs. Other than my daughter, who despises chicken, everyone has loved this dish when I make it. It only takes a few minutes to whip together the marinade in the morning, pour it over the chicken, and let it wait until you turn on the grill for supper.

Crepes: Savory or Sweet
One of the birthday traditions in our family is that the birthday person gets to choose the day’s main meal menu, and the birthday person gets to choose the food for his or her party, if there is one. So far, every birthday party for every kid has featured Party Pizza and chips, along with cake and ice cream of course. This year, Joe broke out of the rut and requested crepes for his birthday party meal. My kids love breakfast for lunch or supper. It is probably their all-time favorite.
It’s really no surprise that crepes are a favorite. It’s kind of like eating dessert for your main course. And then for a birthday party, you obviously can’t skip the birthday cake. Hmmm…Joe’s a pretty smart kid–dessert for lunch and cake for dessert. He knows how to work the system.

Taco Salad {for one or a crowd}
This taco salad has been in my regular meal rotation ever since I left home and began to cook for myself. It’s quick, easy, delicious, and can be made as healthy or decadent as you wish. It can also easily be scaled down to one individual salad or scaled up to feed a crowd. It is one of my all-time favorite go-to meals.

Mom’s Classic Tuna Pasta Salad
This is one of those nostalgic recipes for a simple food that I remember eating many times while growing up. My mom’s tuna salad is still the best I can remember eating. Sometimes people fancy up their tuna salad by adding cheese, hard-boiled eggs, or other spices or herbs, but I still like it best just the way Mom made it. Now I can’t say for sure that this is going to turn out EXACTLY the way Mom made it because it’s another one of those recipes that no one really wrote down–“a little of this and a little of that, until it tastes ‘right.'” I’m going to do my best to tell you how to do it.

Southwest Chopped Salad
If you are looking for an opportunity to use all those vegetables in your garden (zucchini, corn, tomatoes, lettuce, peppers) about now or sometime soon, this salad may be just the thing for you. You can use it as a side dish for a Mexican or Southwest type meal, or add some grilled chicken to make it a meal on its own. It is fresh and filling.
