Review: Ingalls Homestead, De Smet, SD

oh beautifulCan you imagine listing “doing the laundry” as a highlight of your vacation or any day? On a recent trip through De Smet, South Dakota, washing the clothes was one of my kids’ favorite events.

Last month, we took a road trip from Colorado to Minnesota to visit grandparents and other family and friends. On our way back to Colorado, we veered a little off-course to visit the homestead of the Ingalls family, and it was well worth it. My kids absolutely loved the place and all of the activities they got to do, especially doing the laundry with a washboard, wringer, and clothesline. My daughter actually asked if we could get a wringer at home. 🙂

Mini S’mores Pies {no-bake}

DSCN7272So we went camping in our driveway on Friday night.

My boyfriend bought a 1973 Starcraft pop-up camper a few weeks ago, and we wanted to try it out, but it’s a 1973 camper, so we wanted to try it out somewhere where we had a back-up plan readily available and where we could do some repairs and planning. What better place than our own driveway? My kids and the neighbor kids were in heaven…well, until the neighbor kids clued in that they were not going to get to spend the night in the camper anyway.

Sausage Stuffed Zucchini Boats

sausage stuffed zucchini boatsSadly, we cannot live on zucchini bread alone, even though it is amazing.

What else can you do with zucchini? There are actually roughly a million options. You can grill them, put them in salad, make them into tots, or make them into cute little boats. I first made this recipe a few years back, and I LOVED it. I gave it a “Delicious!” rating on my printout of the recipe. Now that I have a garden and an abundant supply of zucchini, and my kids’ tastes have progressed beyond only Party Pizza and macaroni and cheese, I decided to try it out on the whole family.

It was a surprising success!

Dirt and Worms

Dirt and worms 2This started out as kind of a practical joke on my youngest daughter. Whenever she finishes a meal, she always asks if she can have dessert; however, until recently, she pronounced it as “dirt.” “Mommy, can I have dirt?” We tried many times to get her to understand that the word has two syllables, and we would ask her every night if she really wanted “dirt” for her dessert. She continued to say “dirt” anyway.

One random day I recalled that my mom had come home from work many years ago talking about this flower pot dessert someone had brought. She said it really looked like a pot of dirt with an artificial flower in it. It was actually a combination of chocolate pudding and crushed Oreo cookies. I Googled it, and of course, it’s a real thing.

I decided that I would trick Nina by giving her dirt the next time she asked for dirt.

Zucchini Bread

serving platterMy kids and I had our first garden at our church’s community garden last summer, and the kids just loved it. Their excitement was like that of Christmas morning when we spotted our first sprouts coming up out of the ground, and they were astounded when we picked our first vegetables. Eating the vegetables was not always met with the same enthusiasm.
