Cabbage, Tomato, and Sausage Soup

finished soupI know all the cool kids were eating corned beef and cabbage yesterday for St. Patrick’s Day, but I have never been one of the cool kids. I have never made corned beef and cabbage, and I think I have only eaten it once or twice. Not a lot of Irish influence in my life I guess. I do love to take advantage of all of the cabbage on sale this week, however, to make this yummy cabbage soup.

Mini Puffed Oven Pancakes

Breakfast for breakfast, of course, but breakfast for lunch is their favorite at school, and breakfast for supper is the ultimate. Breakfast for supper is almost always the birthday meal request around here, even from the adult kids. It’s surprising that they wouldn’t want the usual gruel I know.
