Asian Turkey Meatballs

not dryApparently, there are some people in my state who are really happy right now because of some kind of football game coming up in a couple of weeks. I know this almost makes me un-American, but I have to admit that I  have zero interest in football or any other professional sport. I’ve never really learned the rules or the vocabulary of football. And my teacher self has always been bitter about the pay difference between someone who plays ball versus someone who changes and sometimes even saves lives. I’m kind of a Debbie-downer I guess when it comes to sports. I do, however, have a LOT of enthusiasm for things that give me an excuse to feed people delicious food. The Super “Bowl” is really all about making the most super bowl of appetizers or dip, right?

Right.

Mom’s Peanut Blossoms {Valentine Edition}

cookie trayDoes anyone else remember eating these cookies with Brach’s chocolate stars on them instead of candy kisses? Even though I am not a big fan of chocolate all by itself, I have always loved chocolate that is wrapped around peanut butter, and I have fond memories of eating the chocolate stars topping these peanut butter cookies. I remember eating my mom’s peanut blossoms as a kid; I would eat the soft cookie edge all around the chocolate star first and then pop the star off the last cookie piece, finish the cookie, and then let the star melt in my mouth. Mmmm.

No-Bake Lemon Cheesecake

Roasted Cauliflower

roasted cauliflowerI try to serve vegetables or fruit with almost every meal. My kids prefer green beans or sometimes a lettuce salad, but I get tired of having the same thing all the time. In the summer, I could eat grilled vegetables every day, but the rest of the year I need a little more variety. This cauliflower is a great option, and the kids even like it.

Baked Chicken Wings

doneWings are a great option for a main dish, but I also know there is a big football game or something coming up soon, and these wings would be a perfect addition to your assortment of delicious snacks and appetizers. I know “lower fat” is not usually a big consideration for football snacks, but for those of you who made resolutions for a leaner 2016, this recipe/technique may be a good option. These wings are easy to make and turn out crispy and delicious. I promise. This is NOT one of those leaner-but-tastes-nasty kind of recipes.
