Cheesy Texas Potatoes
Ok, so I guess you might want to have something for Christmas dinner or Christmas Eve or even breakfast that isn’t a sweet. I know I have shared lots of goodies lately. These potatoes are a great side dish for your holiday meal. My boyfriend’s grown kids would probably recommend them highly. They don’t care too much about what else we have for the holiday meal as long as I make “those potatoes.”

Cinnamon-Sugar Baked Nuts
Cinnamon-Sugar pecans are another one of my top-ranking treats at Christmas. You can use whichever nut you prefer, but pecans are always my favorite choice. These are similar to the caramelized nuts I make, but those are more of a glazed sweet nut while these cinnamon-sugar nuts have kind of a dry texture. It is kind of hard to explain. If I compare the nuts to photo finishes, the caramelized nuts are glossy while the sugar-cinnamon nuts are matte.

Chocolate Peppermint Cake
I am always slightly embarrassed to post a recipe that includes cake mix as an ingredient because I feel like I am obligated to make absolutely everything from scratch all of the time and cake mix is somehow a personal failure. However, the truth is that sometimes I do use cake mix and sometimes I use canned soup (never together) and sometimes I use Cool Whip and other pre-made store bought products. Sometimes, the foods and desserts made with those products are really good…and easy as a bonus. One of my all-time favorite desserts is sopaipilla cheesecake which is made mostly of crescent rolls from a can.
I am not a big chocolate fan myself, but I have it on good authority that this cake is G-O-O-D. It is super moist, very chocolatey and festive for Christmas with the peppermint flavoring. And, yes, this glorious cake starts with a cake mix and a box of pudding.
