Tuna Wrap
If you are looking for a quick and cool lunch idea, this tuna wrap is great. It’s a little fancier than a plain old tuna sandwich with the addition of some vegetables and shoe string potatoes for crunch.

Ice Cream Cone Cupcakes
Did the picture make you do a doubletake? When I made these for a church function, many people came over just to see how and why the ice cream wasn’t melting. There’s no ice cream. When I told them the top is frosting, most of the adults kind of groaned and walked away–too much sugar–and most of the kids got a grin from ear to ear as they grabbed a cone. The cuteness factor here is irresistible.

10-Minute Sweet and Creamy Coleslaw
Here is another classic barbecue side dish. Coleslaw. Some like it vinegary and tangy, and some like it sweet and creamy. You can probably guess which camp I choose by my title and picture. Sweet and creamy all the way. My mom makes a really good sweet coleslaw that I’ll have to post sometime. It’s pretty similar to this with just a few changes in spice. Hers even includes a bit of chopped banana.

Fresh Broccoli Salad
Do you need to bring a dish for a 4th of July get-together next weekend or maybe for a backyard barbecue sometime soon? This broccoli salad is a great side dish for a barbecue or picnic and can be customized to your liking.
Now I know some of you may say it would only be to your liking if you took out the broccoli… I admit that on a fresh vegetable tray, broccoli is one of the last things for which I would reach. It’s o.k. but not a vegetable I’d relish. (Ha, ha, get it? ;)) The ‘little trees” can be a bit too much with no adornment.
