Fruit Pizza Fruit pizza is kind of old school, I know, but it is one of my favorite desserts. It is a slice of heaven on a plate. A crust of soft sugar cookie with a sauce of the perfect blend of cream cheese, sugar, and vanilla; topped with sweet fruits, and finished with an orange-pineapple glaze. Yum. When the spring fruits start appearing and going on sale in all the stores, I always think of this dessert.

As I have become more experienced in the kitchen, there are certain tools that I no longer can imagine cooking without. I love kitchen tools! I have warned you multiple times that I am a nerd, and as a former English teacher, Shakespeare’s birthday is a high holiday. Well, o.k., maybe not for everyone. Maybe it is only for me.

Sopaipilla Cheesecake

I am almost embarrassed to share this recipe. I usually pride myself on making things entirely from scratch, but this wonderful dessert is held together by store-bought crescent rolls, some sugar and cinnamon, and a couple bricks of cream cheese. It’s sooooooo yummy. Everyone loves it. When I make this, it is almost a guarantee that someone will seek me out to say how good it is and/or to ask for the recipe. The pictures do not do justice; this pan probably looks pretty ordinary to the unsuspecting person standing by the dessert table. However, there’s something extraordinary about this particular combination of cream cheese, butter, sugar, cinnamon, and of course, the crescent rolls.

Creamy Chicken and Wild Rice Soup

You just never know what you are going to get when it comes to springtime in the Rockies. We have had a stretch of warm wear-short-sleeves kind of days and now today snow. I had originally taken pictures and planned a post for a lovely spring dessert that might be nice for a spring bridal or baby shower or a First Communion or Mother’s Day, but the overcast sky and snow today brought me right to warm and hearty soup. I love soup. I love how you usually get all the elements of a good meal in one pot–meat, vegetables, starch. It is just so cozy and homey. It’s the kind of meal that should be followed by a family movie night snuggled up on the couch or maybe a wild game of Uno. That was not to be this time. Our soup tonight was followed by a church garden planning meeting, so I guess we Colorado people are always optimistic that spring and summer will come eventually.
