Pi Day Pie: Chocolate Chip Cookie Pie

How are you going to celebrate?

Perhaps by wearing polka dots? Doing a Pi Day dance? Writing a concrete poem? Drawing and coloring circles of various sizes? It all sounds so fun, doesn’t it?

bite 2Might I suggest that making and eating a pie might be the most delicious option? Pie for Pi.

Almost everyone enjoys chocolate chip cookies, right? Now imagine the deliciousness of chocolate chip cookies in pie form. Mmmm.

When it’s still warm and topped with vanilla ice cream? Yes. Do it!

I had never had chocolate chip cookie pie until I met Terry. It is a family Thanksgiving tradition with his kids. My kids are now big fans too. One of the best things is that it can be put together in only about ten minutes and uses common ingredients you are likely to have in your pantry. For this bake, I just used a pre-made crust I had that needed to be used, but you could also make your own.

If chocolate chip cookie pie is not your thing, my chocolate silk pie is very beloved or you might try banana cream, coconut cream, or peanut butter. They are all delicious. Whatever you do, don’t let Pi Day go by without enjoying something round. 🙂 Get your Pi Party on!

Pi Day Pie: Chocolate Chip Cookie Pie

Ingredients:

  • 1 unbaked 9 inch deep-dish pie shell (I used a refrigerated crust this time, but homemade would be even better)
  • 2 large eggsingredients
  • 1/2 cup all-purpose flour
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 3/4 cup butter, softened
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped nuts (optional) (I usually leave them out but used walnuts this time, and it was delicious)
  • sweetened whip cream or ice cream and chocolate syrup for topping (optional)

Directions:

  1. Preheat oven to 325 degrees. Prepare a 9 inch pie pan with an unbaked pastry pie crust.
  2. Beat eggs in a large mixer bowl on high speed until foamy. foamy eggs
  3. Add in and beat flour and sugars. add sugars
  4. Beat in butter. Stir in chocolate chips and nuts if using.beat butter
  5. Scrape into prepared pie pan and smooth the filling.fill pie shell
  6. Bake for 55-60 minutes or until a knife or pick inserted halfway between the edge and center comes out clean.freshly baked
  7. Cool until warm and serve with whipped cream or ice cream.overhead
  8. Leftovers may be left at room temperature or refrigerated. Leftovers can be reheated briefly in the microwave to get the fresh-from-the-oven feeling back or try it cold for a different taste and texture.
