Decorate Your Own Flip-Flops
Now don’t think for one minute that I am the super crafty mom who spends the entire summer patiently and lovingly providing enriching projects for her kids to do each day. I freak out too much about spills and messes and such for that. (Never mind that my house is a wreck otherwise with LEGOS lying in wait in the carpet EVERYWHERE and piles of paper and almost-junk-mail threatening to avalanche off my desk at any moment.) But please don’t let a kid get glitter on my fancy dining room table that I got for free just before it made its way to Goodwill or drop play-doh remnants on the floor. Clearly, that would be too much to bear. I have one, maybe two craft projects that I might be able to accomplish over the whole summer. Maybe even the whole year. Decorate your own flip-flops, kids.

Baked Chicken Taquitos
My oldest daughter HATES chicken. She is one of those people who will spend an hour at the table with the smallest morsel of chicken, shredding it and dissecting it to make sure every possible speck of fat has been removed. I thought she would get over it if she just gave it a chance, but it has been years now, and I have finally conceded that she isn’t going to change her mind. Just recently I have started offering her black beans as a substitute when the rest of the family has chicken. I still want her to get her protein, but I am ready to end the suffering for her and for the rest of the family when she eats chicken. I can’t really understand it myself. I love chicken and have found many different ways to prepare it, plus it is usually the least expensive option for meat.Anyway. I have finally given up on changing her mind.

Key Lime Pie
Key Lime Pie
Ingredients:
- 4 egg yolks, beaten
- 2 (14 ounce) cans sweetened condensed milk
- 1 cup key lime juice (see note below)
- 1 (9 inch) unbaked graham cracker crust, homemade or store bought, or 20 mini graham cracker crusts (Keebler)
- Garnish with lightly sweetened whip cream, lime slices, and/or lime zest (optional)
Directions:
- Preheat oven to 375 degrees.
- Combine the beaten egg yolks, sweetened condensed milk, and lime juice in a large bowl. Mix very well.
- Pour into an unbaked graham cracker crust or 20 mini pie shells.
- Bake in preheated oven for 15 minutes. Allow to cool (I like it best when it has chilled in the refrigerator for a while). Top with whip cream, lime slices, and/or lime zest. Keep refrigerated.
*You can juice fresh key limes if you have the patience for that, but my research has indicated that, in this case, the bottled key lime juice is just as good as the fresh juice. I use Nellie and Joe’s Famous Key Lime Juice that I find at Wal-mart in the canned and bottled juice aisle.

Green Onion Wraps
An onion by any other name would smell as…strong? Are the vegetables in the picture above scallions, green onions, or spring onions? The answer is yes, according to many sources. I used to think scallions were similar to green onions but maybe slightly smaller or milder or some more technical classification difference. Nope. Green onions are scallions are spring onions. The difference is a regional language thing, similar to pop vs. soda (of course pop is right) or duck duck goose vs. duck duck gray duck (of course gray duck is right, you silly goose!).

Strawberry Bread
Did you know strawberry bread is a thing? A few years back, I was invited to a 31 Party by the kids’ speech therapist, and one of the snacks at the party was this strawberry bread. Up until that point, I don’t think I had ever had strawberry bread and didn’t know that it was a thing.
