I just can’t seem to get enough blueberries lately. I posted blueberry buckle a few weeks ago. I’ve made and eaten blueberry pancakes recently, and today we have blueberry muffins. I’ve got my eyes on some blueberry crunch bars to make too. I guess I just love fresh blueberries baked in the midst of sweet bread. It’s the perfect combination to me. Presented with a platter of an assortment of muffins, I would choose the blueberry. Every time.

Grilled Vegetables

grilled vegetablesSummer officially started yesterday, so grilling season is in full swing. Grilled vegetables are one of my favorite summertime foods. I will make them when the weather is nice enough the rest of the year, but summer is really the time to enjoy fresh produce with an extra blast of flavor from the grill. If you love vegetables already, you will surely love them even more when they are grilled. If you are not a big fan of vegetables, you might give these a try because the grilling adds a different dimension of flavor. Onions, for example, become sweet and almost caramelized. They are so so good.

A Dad Who Didn’t Have to Be

Father’s Day is coming up this Sunday, and like Mother’s Day, it is a holiday fraught with emotion.  I am sure some will be happily celebrating and remembering while others feel pain, resentment, anger, embarrassment, regret or a host of other feelings. Sadly, we seem to frequently hear about fathers who are absent or otherwise not living up to their responsibilities. The upcoming Father’s Day may be sad or a reminder of the void for many people. Today, however, I would like to recognize the dads who didn’t have to be–the dads who are not just taking on responsibility for kids who may not be biologically theirs but loving them too.

Teriyaki Burger with Grilled Pineapple

Teriyaki burger with grilled pineappleI like to cook, and I cook pretty well. I like to try new recipes, and I seem to have a knack for selecting good ones. I would say I try at least one new recipe every week, but sometimes I try several. After almost ten years of dating my boyfriend Terry, he has eaten A LOT of different delicious foods and my repertoire has expanded tremendously. In spite of the depth and breadth of my cooking, when I asked him about his favorite foods a few years ago, he lit up and said, “pizza and burgers.” This kind of frustrated me because I could never make burgers at home that tasted nearly as good as the ones at restaurants, and I had not yet found a delicious homemade pizza recipe either, though I was trying. As a cooking and baking fanatic, this hurt a little bit. His favorite foods were not things I made. Burger King burgers or pizza from a delivery place outranked anything I had ever made. So sad.

Candy Carrots

My kids and I have a plot in the community garden at our church, and there was an event there this past weekend for which I made cupcakes. I thought these candy carrots made a fitting, fun, and festive decoration for the garden event, but they would also be a great accent for carrot cake or other carrot based bars or desserts. (I will have to share this chocolate cupcake recipe another time because I did not have time to get detailed pictures of them and the process this time. There is a fabulous surprise ganache filling inside that I want you to see. Chocolate fans love them.) In the meantime, you could easily make a box mix of cupcakes or cake or use your favorite recipe. Brownies would work too.
