Parmesan chickenWhen my kids first came to live with me, they informed me up-front that they DID NOT like spaghetti or lasagna. I was surprised because I thought all kids like spaghetti. I think I may have tried once or twice anyway, but they lived up to their promise that they would not and did not like it.

Thoughts on Labor Day and More

As I was pondering my Labor Day post, I originally assumed I would do business as usual and just post one of the recipes I have made and photographed recently, and then I started thinking about the meaning of Labor Day and why we get a Monday off every September. This then made me think about some research I have been doing for a consulting job I have right now, and then the words just started forming in my head. I did not realize how passionate I am about this topic.

Bananas Foster

Bananas fosterWednesday was the 10th anniversary of the first time Terry and I met. We met through an online personals ad, but our first in-person meeting was at a Mimi’s Restaurant for dessert. I don’t remember exactly what the dessert was, and they no longer serve it, but I know it was Bananas Foster something. I believe it was a cake or pie. I remember that it was wonderful. (I must have thought Terry was too because I agreed to see him again.) HPIM0119

Some time later (perhaps our first anniversary?), we went to a Sunday brunch at an upscale restaurant here in town, and they served Bananas Foster as part of the meal. Oh. My. Goodness. I LOVED it! I remember that it was cooked and lit on fire right in front of me while a fresh Belgian waffle was being prepared. The hot waffle was topped with cinnamon ice cream and then the lovely Bananas Foster sauce. I was in heaven. I’m not sure why this dessert made such an impression on me. I like bananas o.k., but I have never been able to get past the taste of alcohol–this does not seem like the profile of a Bananas Foster fan. The combination of the hot, crispy waffle, the smooth sauce, and the lovely sweetness of the banana worked for me.

Labor Day Recipe Roundup

Even though it is not the end of summer yet according to the calendar, Labor Day marks the end of summer for many people. It is traditionally the “last hurrah” before school begins. It marks the closing day for many community pools, amusement parks, and state fairs. Growing up in Minnesota, it was always the last day before school started and the last day of the hometown festival.

My kids have already been in school for a month here in Colorado, but this weekend still does seem like a turning point of sorts. We will still break out the grill many more times and wear our sandals a little longer, but this seems like the last weekend for community picnics, mass grilling, and the sweet freedom of summer. After this weekend, we will be diving into all things warm and cozy, and apple and pumpkin.

To help you get ready for any last picnics or barbecues you may be planning for this weekend, I am doing a round up of the recipes I have shared so far that would be great additions to a picnic, barbecue, or potluck you may be attending or hosting. There are desserts, appetizers, main dishes, and sides.

Beef and Broccoli

beef and broccoliBeef and broccoli is my second favorite Chinese food, so before I found this recipe, I almost never got to eat it. We don’t go out to eat super often, and the kids have so far not been big fans of Chinese food, so when we do go out for Chinese, I always want to order my favorite dish which is sesame chicken.  I get to enjoy beef and broccoli at Chinese buffets, but we really try to limit our visits to buffets.

I was optimistic when I first tried this recipe a few years back. I had tried a handful of other beef and broccoli recipes that were just mediocre, but this one looked and sounded really good. I was not disappointed and have been making it ever since. Added bonus: It is made entirely on the stove, so no extra heat in the house from an oven.
